Pear, Apple, and Pomegranate Salad

Well, since this is my first REAL post, I should probably mention that I adore autumn. It's my favorite season by far, between Halloween, Thanksgiving, all the foods that are in season, the weather, the changing leaves, that you can get pumpkin flavored anything, it's just a magical time of year. It helps that I don't like hot weather, so the cooler weather is a nice change.

So, here's a salad I made using some delicious autumn fruits. I actually made this salad twice, however the first time I used fresh figs (One of my favorite foods, even if it's expensive and hard to find), and didn't use fennel. I don't think figs really added much in terms of texture, but if you choose to add it, you can.

Today I had it paired with a Ham, Pear, and Brie sandwich.

It's a very simple, and very quick, autumn lunch.

Pear, Apple, and Pomegranate Salad
1 pear, I used a Bartlett pear, if you wanna know
1 apple, I forgot the kind, but it was a crisper variety, which is important to the texture of the salad.
About 2-3 Tablespoons pomegranate seeds
A few prongs of fennel
A splash of apple cider vinegar

Simply thinly slice the apples and pears, I used a mandoline, and mix with remaining ingredients. Done and done! Wasn't that easy? That makes about 4 servings. I didn't actually make that much, simply using some of the pear slices from the sandwich and saving the remaining 3/4s apple in the fridge.

As for the sandwich, well, it's simply about 2 oz sliced brie, some sliced pear, a few slices of ham, and a touch of honey (I only use local honey, in this case wildflower honey, and I recommend you try the same). Simply assemble and place, open faced, in a toaster oven until the cheese is melted and bread toasted.

The salad will hold up well in the fridge, so you can make it ahead of time and serve it with dinner, or pack it in a lunch to go when you have work or school. The sandwich, obviously, is best hot. Please, when you make it, tell me how you like it :)
